PLATEAU CHEESE (Pure Yak milk, Bergkase type) is our flagship product. Chesinger is one of the very few cheese makers in the world who have the expertise to produce cheese using pure Yak milk.

Tongkur Cheese Wheel

Semi Hard to Hard Cheese, strong to sharp taste.
Crafted at Xining (2300m) in Apr 2009
Great as it is, with wine, pasta, toast, pie, salad, meat dishes.

CHESINGERS "Tongkur Cheese" is an aged cheese, made from Cows milk collected from dairy farmers at Qinghai?s Huangyuan area (Tongkur in Tibetan, thus the name), a minority town which is a famous historic trading post where Tibetans came down from the plateau to trade their horses with tea leaves from Han Chinese. The cheese has the natural milk's fat content, low moisture content and therefore semi-hard to hard texture. Because of the longer aging (more than 6 months) since April, this cheese has strong to sharp taste.

Tilsit Cheese Wheel

Crafted at Qinghai Lake Grassland (3300m-3500m) in Sep 2009
Great as it is, with crackers, pasta,toast, salad, meat dishes.

CHESINGERS "Qinghai Tilsit Cheese" is made from Cows milk collected from herders around Nyeda area (3800 m), called Riyueshan (Sun Moon Mountain) by the Han Chinese in Qinghai province. This Cheese has the natural milks fat content, high moisture, and is therefore a semi-soft cheese. During the process the curd was "washed", and the cheese has aged for about 3 months since September. Therefore Qinghai Tilsit has a soft texture and mild taste.

Use it to give a cheesy richness to rolls, muffins, biscuits, chips, and bread. Sprinkle it over popcorn or a salad. Make your own macaroni and cheese. Use it directly as flavoring on hot dishes like spaghetti, soups, chowder, and other main dishes. Our kids' favorite is to eat it straight shot as snack! It's great for camping, backpacking, and storage where refrigeration is not available.
